Weekly Meal Plan – July 14, 2019

One thing I have found to be super helpful at keeping this household on track is having a weekly meal plan, and I usually spend Sunday’s doing a lot of prep. I was tired, and kind of at the point where I just wanted to get things done, so I didn’t take pictures of my prep this week, but I will in the future.

We are generally crazy busy during the week. I find that prepping and planning takes the stress out of meals, and I don’t have to worry about what we are going to eat during the week. When I don’t plan, we tend to panic, and succumb to the siren song of fast food or junk food.

Now that it is summer, we try to plan for meal that involve the least amount of heat possible. I tend to choose things I can cook outside on the grill, in the air fryer, and in the Instant Pot.

You will find this week’s meal plan involves a TON of crabs because we ended up getting a half a bushel yesterday for super cheap. We ended up picking about four pounds of crab meat, so it will be pretty prominent in this week’s meal plan.

For breakfasts this week, I plan on keeping it simple – eggs and turkey bacon or cereal on my work from home days.

I also always make a dozen hard boiled eggs in the instant pot for the week because they are easy for grab and go breakfasts, make quick snacks, and I can easily make them into egg salad for my husband’s lunches.

Lunches this week will be either crab salad or chef salad. I prepped some crab salad today – super easy and just 1 Smart Point per serving from the light mayo.

Here are our dinner plans for the week. I’ll be posing recipes for them during the week.

Tonight we had crab stuffed chicken breasts (recipe in a separate post). Here is the rest of the week:

Monday: Crab Cakes – my hubby will have his on a roll, and l’ll have mine on some tomato. We’ll have that with air fryer corn and squash.

Tuesday: Taco Stuffed Portobello mushrooms

Wednesday: Grilled Pork Chops with Hibiscus and Tangerine rub, Air Fryer Sweet Potato Fries, and a salad

Thursday – Crab Stuffed Portobello Mushroom Caps, Corn and more squash

Friday – Grilled Salmon, Air Fried Roasted Potatoes and Broccoli

Saturday – Turkey Burgers, Air Fryer Fries

  1. with you there. I’m always better if I’ve prepped lunch on Sundays, and the shopping bill goes down if I sit down and write down what we’re having each evening, and I don’t throw any food away that way (also means the other half can’t deviate when he’s cooking :D)
