Saturdays are our splurge days. We do a lot of running, and Sundays are Weigh In Days for me.

In the past, our Splurge Days included breakfast out at Perkins or IHOP. And one of my favorite things was stuffed French Toast.

But now with WW and being lactose intolerant, I thought Stuffed French Toast was a thing of the past.

But, I finally found dairy free cream cheese yesterday and it is a game changer.

This recipe comes out to 8 Smart Points for 2 pieces.

Here is what you will need:

Start off with half a cup of unsweetened vanilla almond milk.

Then crack an egg in a large bowl.

Add the milk to the egg, and then add in a splash of vanilla and a few drops of liquid stevia.

Then I mix in just a bit of my “cinnamon sugar” which is monk fruit sweetener and cinnamon.

And then beat it up!

In a small bowl, I take 3 tbsp of dairy free cream cheese. I add a little more stevia and vanilla.

Mix that well.

Now, take 4 slices of light bread. I like the 647 bread.

Spread the cream cheese mixture evenly on the bread.

Now it is time for the blueberries!

Now close up your bread. Like a yummy sammich.

Dip the bread in your egg mix.

And then flip to make sure you get both sides coated.

Coat a skillet with nonstick spray and heat over medium heat. Then put in your yummy egg coated bits of delicious. I like to add a bit more cinnamon sugar.

Flip them after about 2 minutes.

And cook for a couple minutes and then plate!

I top with more blueberries, a drizzle of SF syrup and a bit of sliced banana. Nomnomnom.

It is worth all 8 Smart Points. Nine since I also had turkey bacon. YOLO
