When I first discovered I was lactose intolerant, I thought cheesy, yummy Italian dishes were a thing of the past. Especially with adding in the WW component.
But when I was meal planning over the weekend, I stumbled across a recipe for Chicken, Tomato and Polenta Parmesan Foil Packets on the WW app, and knew in a heartbeat that it would be one that I could modify and still be a relatively low Smart Point, easy to make weeknight meal. This recipe in its unaltered form is 6 Smart Points. However with the alterations I made, it cuts it down to 4 Smart Points and becomes dairy free.
Here is what you will need:

- Either chicken breast or turkey breast cutlets in 4oz portions. (I used thin cut turkey breast cutlets)
- Pizza sauce
- Fat free polenta (I used a sundried tomato polenta)
- Salt and pepper
- Plum tomatos
- Trader Joe’s Mozerella Cheese Style Alternative (made with almond milk)
- Fresh basil
- Note, since I also made this for my hubby, I also had mozerella (1oz per serving) and parmesan cheese
To start, preheat your grill on high. Then prep your ingredients. Each serving will use four ounces of poultry, 2 slices of polenta, 2 tablespoons of pizza sauce, 3 slices of tomato, and 1/4c of shredded cheese (or 1 oz of mozerella and 2 tbsp of parmesan cheese).
Slice your polenta. Since I made 4 servings (2 for each of us…I prepped for another meal this week when we will be traveling) I made 8 slices.
Slice your tomatoes.
And chiffonade your basil (that’s a fancy way to say chop it)
Spray a 20″ piece of foil with cooking spray, and place 2 slices of polenta and 4oz of poultry. Then season with salt and pepper.
Next, spread your pizza sauce over the poultry and polenta.
Next, lay your tomato over your poultry.
For my husband’s, I sprinkled on 1 tablespoon of parm cheese.
Now, fold your foil and seal your packets by folding the long end first, and then sealing the short ends.
Then the foil.packs go on the grill for 10 to 12 minutes.
When time is up, unfold the foil and plate. Add the cheese to the top of the poultry and polenta.
Then top with your basil (and if you aren’t dairy free, another tablespoon of parm). The one below has the almond cheese on it.
This was a simple and delicious dish. It was so flavorful! And simple. Did I say simple? Because it was simple!
Definitely will have this again!
