This is one of our favorite recipes. You can add any protein and it will change the Smart Point value.

And it is so easy to make! We made this with ground pork, so it is higher on the Points value (8 Smart Points) but you can easily do it with ground turkey, chicken or shrimp!

Here is what you will need:

  • 1 pound of ground pork
  • 1 pound of mushrooms
  • 1/2 large onion
  • 2 green onions
  • 1 can of sliced water chestnuts
  • 1 bag of cole slaw mix
  • 2 garlic cloves
  • Minced ginger
  • Low sodium soy sauce (or coconut aminos)
  • Sesame oil

First, dice and chop your veggies.

Next, heat your wok over high heat, and brown your ground pork.

I season mine with some Umami seasoning and some Trader Joe’s 21 Seasoning Salute.

Once browned, I add 3 tablespoons of soy sauce.

And 1 1/2 tsp of sesame oil.

Then, I add my ginger. The original calls for a tsp but I like lots of ginger.

Now, add your veggies.

And then add your water chesnuts.

Cook about two more minutes until done!

This makes 4 dinner sized servings, or 8 lunch size portions.

    I just made your recipe for egg rolls in a bowl. Delicious! I used shredded chicken breast. Have you ever made them in an egg roll? If so,would you cook them in an air fryer. The air fryer is new to me. Thank! I’m really enjoying your blog. A lot of good tips recipes etc.
