I spend my Sundays meal prepping. It sets me up for success. Today I got home from our beach place around 11am, and then prepped until 4pm. At the end of this post, I will post a recipe for Keto Waffles that are just 4 Smart Points per serving. So if you are just here for the recipe, scroll on down.

I always start with a list. #imalistperson

Every single week, I always make a bunch of hard boiled eggs in the Instant Pot using the 5 5 5 method. 5 minutes o. Manual, 5 minutes on Natural Pressure Release, and 5 minutes in an ice bath. They always come out perfectly. We use them for snacks or to make egg salad.

I grilled up chicken tenders for my lunches. Easy peasy. I coated the chicken tenders in Tangerine Hibiscus Rub and threw them on the grill. Yum.

I also steamed some shrimp in the Instant Pot, so I have chicken and shrimp for lunches.

Also for lunches, I made some air fryer ranch cauliflower. Holy smokes this is like crack cauliflower. Yum

I made a batch of guacamole for the week.

I cut up strawberries and mixed them with blueberries, and then cut up some bananas to throw in the freezer for smoothies.

I prepped veggies for chicken kabobs, stir fry, and fajitas for dinners this week.

And finally, I made a batch of keto waffles (pssssstttt…stop scrolling…here is the recipe). Here is what you will need:

  • 5 eggs, separated
  • 4 tablespoons of coconut flour
  • 4 tablespoons of Monk Fruit Sweetener.
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 2 tablespoons of melted butter (yes, butter)

First separate your eggs.

Then whip the egg whites until stiff peaks form.

In a separate bowl, mix 4 tablespoons of coconut flour into your egg yolks.

Next, add 4 tablespoons of monk fruit sweetener. I love this brand.

Next, add your 1 tsp of baking powder.

Then add 2 tsp of vanilla. Or more. You can also add a different flavoring if you want. Lemon zest is yummy.

Mix that together well.

Now add in your two tablespoons of melted butter.

Make sure there are no lumps.

Now, slowly fold in the egg yolks mixture to the egg whites.

Preheat your waffle maker. I use this little mini waffle maker and it is perfect.

Spray your waffle maker with non stick spray and then add 1/4c of the waffle batter and close the lid.

This makes 4 servings of 2 waffles each. They are not going to be crisp waffles, but they are coconut-y and sweet and eggie and yummy. So so yummy.

And just 4 Smart Points for 2 waffles.
