I love cake.
I love easy mug cakes even more. Especially when I can make them Dairy Free. And this mug cake is to die for.
I mean, who doesn’t like a quick, easy dessert that is just 4 Smart Points and fits into dairy free diets?
And it is so easy!
Here is what you need for the cake:
- 4 tbsp coconut flour
- 1/2 tsp baking powder
- 2 tbsp monk fruit sweetener
- 1 egg
- 1 tsp vanilla extract
- 2 tbsp unsweetened applesauce
- 3 tbsp unsweetened almond milk
Spray a mug with nonstick spray. Add the coconut flour, baking powder and monk fruit sweetener to the mug and stir together.
Using a fork, whisk in egg, vanilla, applesauce and almond milk.
Microwave for 60 to 120 seconds (depending on your microwave).
For the icing:
- 2 tbsp tofutti cream cheese alternative
- 2 drops (or to taste) liquid stevia
- 1/2 tsp vanilla
Mix it together very well. Spread it on your mug cake. Top with berries and almond milk reddi whip.
