Y’all. I love me some cheese. I was super sad when I discovered that I was lactose intolerant. Goat cheese, however, doesn’t bother me. And the Angels sang.

I love that when you go to WW Workshops, you get your weekly with a new recipe every week. I have had some amazing recipes. You can also find these recipes in the app.

I was looking for something different for lunches and this recipe struck me. My hubby wouldn’t touch it (not into spirealized veggies) but it looked right up my ally and was super easy to put together.

Since this is a #wwfreestyle recipe I will just post it below, although I did make a few substitutions. I will put those at the end.

Possible substitutions:

I subbed spiralized zucchini for the yellow squash, but c’mon…they are the same thing. LOL You can also sub spiralized sweet potato, but that will up the Smart Points.

Also, I added garlic and onion instead of shallot, mostly because I forgot to pick up the shallot. But it was still delicious.

This was a definite winner and I will totaly make it again. It was surprisingly hearty and filling. And the lemon was fresh and delicious.
