I LOVE Pumpkin spice! I love pumpkin. Pumpkin Spice Lattes…pumpkin muffins…pumpkin bread…pumpkin cheesecake. I am not a lover of pumpkin pie though.
What can I say? I’m complicated.
We are having our first cool evening, and I am feeling all Fallish…and I wanted pumpkin cheesecake. What I didn’t want was to spend 14 Smart Points on a sliver of cheesecake that would tear my stomach up.
So. I made pumpkin cheesecake fluff.
This yummy dessert is just 1 Smart Point, and so easy to make.
Here is what you need.
2 cups of Nonfat Greek Yogurt
1/2 a can of pumpkin puree (not the pumpin pie filling)
1 package of sugar free Cheesecake Pudding mix.
Vanilla, cinnamon, nutmeg, and brown sugar substitute.
Mix the yogurt, pumpkin and cheesecake mix together with a hand mixer.
Add 1 tsp of vanilla.
1 tsp of cinnamon.
1/2 tsp nutmeg
And 1 tbsp of brown sugar substitute.
And mix until blended.
This makes 4 big servings for 1 Smart Point each.
