We caught two really good flounder yesterday!

I learned how to clean them and filet them, and wanted to eat them while they were fresh, so I whipped up some flounder stuffed with spinach and goat cheese. It was absolutely delicious.

Here is what you will need:

4 good sized flounder filets.

1 small onion, chopped.

2 cloves of garlic, minced.

1 can of mushrooms. You can use fresh too, but I didn’t have any fresh on hand.

10oz of fresh baby spinach.

2 oz of goat cheese. I had just under 2oz….oops.

Salt, pepper, paprika, and I Can’t Believe It’s Not Butter Spray.

First, preheat your oven to 400°, and spray your baking dish with non-stick spray.

Spray a large skillet with non-stick spray, and heat over medium high heat. Saute your onions until they are translusent, about three minutes.

Add your mushrooms and garlic.

Saute another minute until the garlic becomes fragrant, and then add your spinach.

Your spinach will wilt down. A lot.

Then, stir in your goat cheese, and salt and pepper to taste.

Stir over medium heat for about three minutes until cheese melts.

Once it cools for about 5 minutes, place a quarter of your spinach mixture in the center of a fish filet, and roll it.

Place your fish seam side down in your baking pan.

Repeat with the other three filets.

Spray your filets with I Can’t Believe It’s Not Butter Spray, salt, pepper, and paprika.

Bake for 15 minutes uncovered.

I topped mine with some fresh chopped parsley.

This makes 2 servings and each serving is 3 Smart Points.

  • 4 flounder filets
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 can of mushrooms drained
  • 2oz goat cheese
  • 10oz baby spinach
  • Salt
  • Pepper
  • Paprika
  • I Can’t Believe It’s Not Butter Spray

Preheat oven to 400°, and spray your baking dish with Non-Stick Spray.

Spray a large skillet with Non-stick spray. Over medium heat, saute your onions until translucent. Add mushrooms and garlic and saute 1 minute, until garlic is fragrant. Add spinach and wilt. Stir in goat cheese, salt and pepper to taste. Cook until cheese melts, about two to three minutes. Let mixture cool about five minutes.

Lay out 1 filet and place 1/4 of spinach mixture in the center. Roll the filet, and place seamside down in baking dish. Repeat with 3 other filets.

Spray fish with I Can’t Believe It’s Not Butter Spray. Top with salt, pepper and paprika to taste.

Bake uncovered for 15 minutes.

Makes 2 servings. 3 Smart Points per serving.
