If you have never had Maryland Crab Soup you are truly missing out. This tomato based soup is spicy and full of crab and veggies, and SO YUMMY. And it really is easy to make. Like SUPER easy.

Here is what you will need.

You will need 2 pounds of blue crab claw meat, a medium onion, some potatos, some carrots, Beef Broth, water, a package of frozen lima beans, a package of frozen corn kernals, a package of frozen soup veggies, 2 cans of stewed tomatos, and Old Bay Seasoning.

First, slice up 1 cup of carrots.

Dice one and a half cups of potatos.

And dice 1 medium onion.

Spray a large soup pot with nonstick spray and put it over medium high heat.

Add your onions and carrots, and sprinkle with fresh cracked black pepper and some Old Bay seasoning.

Saute until onions are soft.

Then add 2 14oz cans of stewed tomatos.

You will want to break up the tomatos as much as you can.

Then add 2 cups of beef broth.

And then 4 cups of water.

To that, add your potatos.

Add 1c frozen corn.

Add 1 package of frozen lima beans.

And 1 package of frozen soup veggies.

Add in 4 tablespoons of Old Bay. Now, this will probably something you want to add to suit you. We like ours spicy.

Now, in a separate bowl, dump your crab claw meat. Sift through it and remove any shells you feel. You will need to get your hands dirty here.

Once you have removed any shells, stir in your crab meat.

Bring to a boil. Then cover the soup, reduce heat to low, and let it simmer 20 to 30 minutes (basically until your potatos are cooked).

This makes a ton. I count it as 3 Smart Points per serving if I base the recipe on 8 servings. I say it makes more, but I am being conservative with points.

This is a yummy, easy soup for the colder weather!

Maryland Crab Soup

  • 2lbs Blue Crab Claw Meat
  • 1 1/2c diced potatos
  • 1 medium onion diced
  • 1c carrots, sliced
  • 1c frozen corn kernals
  • 1 package frozen lima beans
  • 1 package frozen soup vegetables
  • 2 14oz cans stewed tomatos
  • 2c beef broth
  • 4c water
  • 4 tbsp Old Bay (your mileage may vary)
  • Black pepper to taste

In a bowl, sift through your crab meat to remove any shells.

Spray a large soup pan with nonstick spray and add onions and carrots. Season with a sprinkle of Old Bay and pepper. Cook until onions are translusent.

Add tomatos, beef broth and water. Add remaining veggies, crab meat and Old Bay. Bring to boil. Cover, reduce heat to simmer and cook 20 to 30 minutes until potatoes are cooked through.

Makes 8 to 10 servings. 3 Smart Points per serving.
