Accurate representation of me during the past month…

It’s time to get back in the game. I am determined to hit goal in 2020.

It has been ages since I did an honest to goodness meal plan and prep, and obviously, it shows. So I bought myself a Wellness Planner and started to map out goals.

And then I picked up my pencil and notebook and started work on next week’s plan. I did a full grocery shop yesterday, and today, after we de-Christmas’ed the house, I set to work on my prep.

For breakfasts this week, I made Drizzle Me Skinny’s Everything Bagel Cheesy Breakfast Bake.

Let me tell you, you need to make this. Even if you just make the two ingredient dough bagels…because this came out amazing. Refresher on two ingredient dough…1c self rising flour mixed with 1c nonfat greek yogurt. Easy peasy. I am taking a chance on this one because of the lactose, but I will take a lactaid before hand, and it isn’t that much cheese. This is 5SP for Blue and Purple plans and 7 for Green.

For lunches this week, I made Beef Stew (which will also be dinner two nights this week). It is 4sp per serving for blue.

In a large pot, I cut up 1lb of chuck roast, 1 large onion, 2 ribs of celery, and threw in a cup of baby carrots (whole). When the meat was browned, I added 1 tbsp of olive oil and 1/4c of flour and stirred about two minutes. Then I added 6c of beef broth, 1 small can of tomato sauce, 2 medium potatos, diced, a pound of sliced mushrooms, and 1 bag of frozen mixed veggies. I added 1 tbsp oregano, 1 tsp chili powder, 1 tsp onion powder, salt and pepper to taste. Then I brought it to a boil, and reduced to simmer for about 45 minutes covered. It makes 8 servings.

I also made a pot of chicken noodle for my husband. I didn’t point his out, but for blue and purple, it would only be the points for the egg noodles. There is only 1c dry in the recipe and it made 6 servings. For green, add points for the chicken breast. Veggies are carrots, celery and onion.

Then, I prepped dinners for the week.

Sunday night, we are having a chicken cheesesteak sheet pan Supper with potatos. I prepped the onions and peppers and measured out the cheese. The recipe will be up later this week.

Monday we are having beef stew.

Tuesday, since it is New Year’s Eve, we are having Spicy Ginger Shrimp with Baby Bok Choy and rice. I prepped the veggies for this (recipe later this week).

Wednesday, since it is New Years, we are having Hoppin John and rice with cabbage for luck!

Thursday will be leftovers. Probably more beef stew.

Friday we are having pizza (homemade) and Saturday is salmon and potatos.

I also prepped green beans for dinner tonight.

Rice for the shrimp and hoppin john.

Washed and prepped strawberries.

And chopped up veggies for snacks.

I am determined to set myself up for success!
