Last year was the first year I made and kept a resolution. It was not to lose weight or fit into something. It was to get healthier and stay healthy. My mantra was not New Year New Me, but instead, New Year, Better Me.

That resolution will hold for 2020. I want to continue to improve myself, and keep working on my health goals.

2019 was a great year for me. And I feel 2020 will be even better.

Oh, and since it is New Year’s Day, don’t forget a spoonful of black eyed peas for luck! We love our Hoppin’ John, so here is a quick and easy recipe (3sp for Blue and Purple, and 5sp on Green). Here is what you will need:

  • 2 cans of black eyed peas, drained and rinsed
  • Sriacha sauce
  • 4 slices of Canadian bacon, diced
  • 1 green pepper, diced
  • 1 red pepper diced
  • 1 small onion diced
  • 2 ribs of celery diced
  • 2 scallions sliced
  • 2 garlic cloves, minced
  • 1/3c water
  • A drop of liquid smoke
  • 2 cups of cooked white rice

Spray a large skillet with nonstick spray and heat over medium high heat.

Add your Canadian bacon and veggies. Season with salt and pepper and a PINCH of red pepper flakes.

Saute 5 to 7 minutes until veggies and bacon are caramelized, and then add garlic.

Cook another minute until the garlic smells amazing. Then add your black eyed peas.

Pour in 1/3c water.

And add your sriacha. Now, we like ours spicy. This is all on you. Start with a little and then taste it. Add more if you need it. I have been making this for years and well, obviously, I go for it.

Add a few drops of liquid smoke to get that bacon-y taste.

Cover and reduce heat to low. Let cook about 15 to 20 minutes on simmer and then turn the heat off and let it sit up to 30 minutes more.

This makes 4 servings with 1/2c of rice.

Hoppin’ John

  • 2 cans of black eyed peas, drained and rinsed
  • Sriacha sauce
  • 4 slices of Canadian bacon, diced
  • 1 green pepper, diced
  • 1 red pepper diced
  • 1 small onion diced
  • 2 ribs of celery diced
  • 2 scallions sliced
  • 2 garlic cloves, minced
  • 1/3c water
  • A drop of liquid smoke
  • 2 cups of cooked white rice

Spray a large skillet with nonstick spray and preheat over medium heat. Add veggies and Canadian Bacon. Salt and pepper to taste and add a pinch of crushed red pepper flakes. Saute 5 to 7 minutes.

Add garlic and saute another minute.

Add black eyed peas, water, a couple drops of liquid smoke, and sriacha. Cover, reduce heat to simmer, and cook an additional 15 to 20 minutes. Take off heat and leave covered 30 more minutes. Serve over 1/2 c of cooked white rice.

This is best made 1 to 2 days in advance!
