I have shifted my meal prep day from Sunday to Saturday so I can enjoy my Sundays. I wasn’t sure if I would be able to prep today but the stars aligned and here we are!
I switched back to the WW green plan because I really had a lot of success early on, so all prepped items have points listed for the Green Plan.
This week for breakfasts I made a batch of Blueberry Protein Pancake Muffins (4sp for 2) and I made a batch of two ingredient dough Everything bagels (2sp each). I also “boiled” a bunch of eggs in the Instant Pot (2sp each on green).
For lunches, my hubby and I will split a batch of turkey chili (3sp) and skillet corn bread (4sp). The turkey chili has 93% lean turkey, pinto beans, black beans, and kidney beans, as well as corn, peppers, onions and celery. It is 3sp per serving.
I need to plan for some snacks, so I made up some 2 Smart Point snack boxes. Each has about 2oz of shredded chicken breast with hot sauce (1sp), 1 wedge of Laughing Cow (1sp), peppers and carrots.
For dinners this week, we are having meatloaf, tacos, bang bang shrimp, as well as pork chops, pizza and fish. I prepped the veggies for the tacos and meatloaf.
Made a big batch of brown rice for some sides.
Mixed up the sauce for the bang bang shrimp (6 tbsp nonfat Greek yogurt, 3 tbsp sweet chili sauce, and 2 tbsp sriracha…this makes two servings…1sp).
And I chopped and prepped some raw veggies (peppers and broccoli) and cut up some berries for grab and go.
We are all set up for success!
