We are having sesame chicken this week as part of meal prep, and I wanted fried rice to go with it, BUT rice has been irritating my stomach lately. And, admittedly, I didn’t want to spend that points. This easy cauliflower fried rice is just 1 Smart Point on Green, and zero on Blue or Purple!
Here is what you will need:
1c of shredded carrots
1c of chopped scallions.
1c of frozen peas
1/4c of low sodium soy sauce
2 eggs, lightly beaten
3c riced cauliflower
Spray a large skillet with nonstick spray and heat over medium heat.
Pour in the eggs, and let them coat the bottom of the pan. Resist the urge to stir.
When the eggs set up (this will happen quickly), break them up with a rubber spatula and remove from pan.
Add you carrots and all but 2 tbsp of the scallions to the skillet.
Cook about 3 minutes until crisp.
Add in cauliflower and warm through.
Add in soy sauce and stir.
Add in the peas.
And add back the eggs.
And the last 2 tbsp of scallions.
And stir until peas are warmed through, about 1 to 2 minutes.
Cauliflower Fried Rice
- 1c shredded carrots
- 1c sliced scallions
- 1/4c low sodium soy sauce
- 2 eggs, slightly beaten
- 1c frozen peas
- 3c frozen riced cauliflower, thawed
Spray large skillet with cooking spray and heat over medium heat. Pour in eggs and coat bottom of pan. Let cook 1 minute until eggs are set. Do not stir. When cooked through, break up with rubber spatula and set aside.
Add carrots and all but 2 tbsp of scallions to skillet. Cook about 3 minutes until veggies are fragrant and crisp. Add cauliflower and soy sauce and cook 1 minute more.
Add in peas, egg and remaining scallions and cook 1 minute more until peas are cooked through.
Makes 6 servings.
