Happy Saturday! As usual it is Meal Prep Saturday (previously Meal Prep Sunday) and today I kept things pretty simple. I did make some sweet treats this week. Like this batch of 3 Smart Point Pumpkin Chocolate Chip Muffins! Let’s start with those, shall we?

These are super easy! Here is what you need:

  • 1 box of Kodiak Chocolate Chip Muffin Mix
  • 1 can of pumpkin puree
  • 2 eggs

Start by preheating your oven to 375°. Spray your muffin tin with nonstick spray.

In a large bowl, add your mix, 1 can of pumpkin, and 2 eggs.

Mix well, and distribute among your muffin pan (makes 18).

Bake for 15 minutes.

Let cool!

I also made roasted chicken and sweet potato with broccoli for lunches (3sp on Blue).

I made a big bowl of fruit for something sweet.

Chopped the veggies for sheet pan Philly chicken

And chopped lots of veggies for snacks.

I made my husband a big batch of beef stew for lunches.

And steamed some cabbage for dinner.

And I made a batch of 3 Smart Point Ice Cream Snawiches! Super easy! Chocolate pizzelles with 2tbsp of sugar free cool whip. Then wrap in plastic wrap and pop in the freezer.
