So. My husband didn’t allow me to get a pretty shot of these because my husband hovered them so fast!!

We are TRYING to avoid stress eating. We are currently quarantined at home, so we are on edge. I have not been feeling well (allergies and anxiety!) And I am totally craving comfort food.

So, cinnamon rolls it is. And they are 1 point each!

Here is what you will need:

  • 1c self rising flour
  • 1 c plain nonfat greek yogurt
  • 1/3c monk fruit sweetener
  • 1 tbsp of cinnamon
  • I can’t Believe It’s Not Butter
  • 2 tbsp confectioners sugar
  • 1 tsp unsweetened almond milk

Preheat your oven to 375° and spray a round pan with nonstick spray.

In a small bowl, mix monk fruit sweetener and cinnamon. Set aside.

In a large bowl, mix 1c self rising flour and 1c plain, nonfat greek yogurt until it comes together to a dough. If it is a little sticky, add a couple more tablespoons of flour.

Knead the dough until it comes together into a ball. Dust counter and dough with flour and roll out until approximately 1/4″ thick.

Spray with I Can’t Believe It’s Not Butter Spray and then spread cinnamon sugar on.

Roll tightly.

And then cut into 16 pieces.

Place in pan so they are loosely together. This dough won’t really puff up.

Bake for 20 minutes.

While baking, mix 2 tbsp confectioner’s sugar with a drizzle of almond milk.

When rolls come out of the oven drizzle with glaze.

And then enjoy!
