This is a yummy take on my favorite baked oatmeal! Very Elvis like!

Here is the recipe:

Peanutbutter Banana Baked Oatmeal

  • 2c quick oats
  • 1 tsp baking powder
  • 1/2tsp cinnamon
  • 1/2tsp kosher salt
  • 1/4c peanut butter powder plus 2 tbsp
  • 2c unsweetened almond milk
  • 1/4c sugar free maple syrup
  • 2 tsp vanilla
  • 3 ripe bananas

Preheat oven to 375° and spray an 8″ baking dish with nonstick spray.

In a large bowl, whisk together your dry ingredients: oats, 1/4c peanutbutter powder, cinnamon, salt and baking powder.

In a separate bowl, mix milk, syrup, and vanilla.

Pour wet ingredients into dry and stir to combine.

In a separate bowl, mash 2 bananas with a fork. Gently mix the bananas into the oat mixture to combine, and then pour into prepared pan.

Slice the third banana on top of the oat mixture.

Bake 30 to 35 minutes.

Mix the last 2 tbsp of peanutbutter powder with 2 tbsp water. Drizzle over the top of the baked oatmeal.

Makes 6 servings.
